Baking

I am not a cooking and baking guru like my blog might imply. I have only been cooking and baking for about six months, overall (before, I knew the basics but never did anything particularly daring). I very rarely botch cooking a meal. I find I have a natural talent for knowing what flavors to combine and when to remove/replace certain things. However, I am not as great a baker. I ruin about one in every three baking endeavors I take on. Usually it is because I do not pay attention--like when I forgot to add the marshmallow creme to my pumpkin fudge. Tonight, it was because I did not realize there is a difference between cook-and-serve pudding and instant pudding. Yes, you are more than welcome to laugh at me. But I hardly ever had pudding as a child (I did not like it much), and when I did, it was usually from those little cups (I am already a better baker than my mother, bless her heart). So, the lemon fudge I was making did not turn out well. However, I found a recipe for some chocolate cookies with mint icing, and the dough is chilling now. I VERY rarely botch cookies or cakes. I just have an issue with candies. I suppose I just have to practice.

Tomorrow I have to make a cheesecake and a peppermint layer cake as well as finish my cookies. Hopefully I don't get stressed out, and hopefully nothing gets botched this time. Fingers crossed.
