Burnt Out

What a busy last couple of days.

Monday, my mother and I went shopping. I managed to get much of my Christmas shopping out of the way, and it was a lot of fun.

Tuesday, I cleaned. Cleaned, cleaned, cleaned.

Yesterday, I went to the movies with my cousin and had a lot of fun. Came home and wasn't feeling well, so I took a short nap. Then I prepared dinner (fried rice and teriyaki chicken) and made the pumpkin fudge that was for tonight's dinner. Took care of the pets, took a shower, and went to bed, hoping to feel better today.

I felt mostly better when I woke up this morning, other than some stiff joints (which is normal). I got up and came downstairs to cut my pumpkin fudge, and it was still soft. For some reason, it didn't set up this time, even though I did everything right. So, I panicked for a moment, then remembered that I had until late afternoon to bake something. Then, of course, I realized that I was out of sugar, flour, and brown sugar. How did I let this happen?! Quick run to the store (that was closing minutes after I left), and I managed to make some cranberry oatmeal raisin cookies. The last batch is in the oven now, and they've turned out great. I wanted to relax this morning, but alas...So I am leaving in an hour for a dinner with Walter's paternal family, and all is well.

The dishes are piling up. I will do them tomorrow, and make some cheesecakes. Oh, does the work never end?

yes, good cookies! Sad about the fugdge. I hate those moments when u are about to just 'throw somthing together' and u are out of the staples. the other day I was out of flour (well white flour) and out of brown sugar, so I used whole wheat flour and made brown sugar with the last of my molasses and white sugar. I had no chips for these cookies (it was cookies I was making) and so threw in some sesame seeds. I was also out of pnut butter, so subtituted some tahini. It turned out to be a very modern healthy cookie, but being as such, we ate a few and the rest went to the chickens, they did love them tho!

The cookies were fantastic. Marzipan, I made it through all of my Thanksgiving festivities without much pain, but it caught up with me today.

Atomic--At least you had replacements! I was so thankful that the market was still open.
